Is it at all realistic to expect my car to handle like a go-kart after putting on coilovers and an Eibach anti-roll sway bar kit? Or even with these two things will my car still not handle quite that well?
Because I absolute don't want to get new rims or special tires. I mean, I'll buy special tires, but they'll have to fit the stock rims.

^^it depends on what coilovers you go with.. tires make a huge difference in handling though.
i totally forgot that i have Eibach coilovers on my Miata.. they are the Eibach Pro Street S coilovers. IMHO they are not the best for track use, but they work for now.

I like my H&R coilovers definitely make the car a whole new animal, but I only had time to do one autox with them. Seemed to make the car a little loose in the rear compared to the SVT suspension I used to have. I am running stock sways and it seems to be great for carving up and down the on/off ramps.

Just remember, the more options for adjustment you put in the suspension equation, the more possibilities for screwing it up.
Just my $0.02 You'll probably be really happy with that coilover setup. H&R makes good stuff.

^truth unless you have plenty of time to spend dialing in your suspension having just plain coilovers that don't have any adjustments other than up and down will likely be more than enough.

How can you tell when you've got it right? How difficult is adjusting the hight? Is it as simple as getting under the car and just tweaking a switch?

Telling you have it right just entirely depends on what you like. What I think is perfect may be completely different for someone else. As for ride height change, for the front you have to raise the car up remove the wheels and use the supplied wrenches in the kit to adjust the height. The rear just needs to be raised up to adjust.

Feel is a small part of the equation. It will get you going in the right direction but won't optimize a setup.
